The Philosophy: Why We Do “Batches”
Much like wine, the taste of matcha is heavily defined by its terroir—the unique combination of soil, topography, and climate where it grows. Because nature is always changing, no two harvests are exactly the same.
We believe you should taste the season. We only offer the freshest supply of matcha, harvested within the current window. This means each batch will have its own distinct character.
Instead of hiding behind standard marketing labels like “Ceremonial,” “Premium,” or “Culinary” (which often mean nothing), we prefer a more dynamic approach. We simply source the highest quality tea we can find for our customers, at an honest price, and explain the flavour profile of each batch honestly.
Batch #1 Tasting Notes:

- Harvest: Late Autumn 2025
- Origin: Guizhou, China
Batch #1 is a bold introduction. It is a vibrant green with a slight warm, yellow undertone – a natural characteristic of the late autumn harvest, where the leaves are more mature than in spring.
It dissolves effortlessly in water. Upon whisking, it creates a dense, stable layer of microfoam. The plain matcha, after dissolved in water, produced a vibrant emerald green.
Expect a robust personality. Batch #1 is sharp, grassy, and distinctively bold. It carries a slight bitterness that hits the palate first, followed immediately by a clean, sweet aftertaste.
How to Drink It:
Because of its bold profile, Batch #1 is perfect for working with milk or milk alternatives.
- Lattes: The sharpness cuts perfectly through creamy oat or dairy milk, ensuring the matcha flavor isn’t lost. It doesn’t get “drowned out” like more delicate spring blends.
- Creative Drinks: Perfect for matcha lemonades or tonics where you need a strong matcha flavour.
- Baking: Excellent for cookies and cakes due to its vibrant color and honest matcha taste that survives the oven.
- If drinking it straight (usucha), we recommend using cooler water (approx. 70°C) to mellow the bitterness.
